We’re thrilled to announce that Chef Peter Brass from Sodexo Australia was named one of the top three APAC Regional Finalists in this year’s challenge! Competing against 47 exceptional chefs from across the region, Peter stood out for his creativity and culinary prowess.
His star dish? Vegan Gnocchi with Beetroot Pesto and Vegetable Crisps—a mouthwatering recipe that wowed the judges and showcased his commitment to sustainable cooking.
Reflecting on the challenge, Peter shared:
“While undertaking this challenge, I was amazed at how versatile one vegetable, one grain, or even one pea can be. It was a re-education into what we can achieve, and I was mind-blown and re-energised into plant-based ‘protential’!”
