Global Chef Tour with Rachael Swain

Sodexo Australia’s Chef Rachael Swain recently took part in the USA Global Chef tour for Fall 2016, which brings together top chefs from around the world to share different cuisines and cooking techniques. The month long tour, taking place from Sept to October, included Global Chef training and special functions held at Keene State University in New Hampshire, Norwich University in Vermont, U Albany RPI in Troy NY, Le Moyne College in Syracuse NY, Nazareth College in Rochester NY, Binghamton University NY, Stony Brook University in NY, and University of North Carolina in NC.

The mission of each Global Chef is to share their authentic native cuisine and culture with American consumers and our team members from around the world. Chef Rachael Swain trained other Sodexo chefs in the program to cook recipes from her portfolio of Aussie food.

Some description

Rachael has been with Sodexo for 4 years and currently works in the Seniors segment.  She went from “feeding 100 elderly residents to feeding 8000-9000 hungry students daily”. The select US Education accounts Rachael visited were mulit-sites with very large kitchens and 150 to 300 catering staff and chefs. “Excecutive chefs running the multi kitchens were very organised, very good at maintaining compliance in the food safety program with staff team meetings daily. I met some truly wonderful and talented people on my tour”, Rachael recalls.

While every event was fantastic, the most memorable function of the tour was at Binghamton University.

Students and faculty alike enjoyed authentic Australian cuisine, entertainment, activities and much more at the Dining Center on Thursday, October 20th. We also held a catered luncheon in collaboration with Vice President for Student Affairs, Brian Rose, at the ITC Rotunda.

“We had lambs shanks in Barossa Valley Red, Apricot Chicken, Slow cooked pork belly, salmon, Prawn and Mango salad, passionfruit tarts, pavlovas, Lamington Cheesecake, sausage rolls. “The Americans loved these! I even got them to try Vegemite… in the form of a cheese and vegemite pinwheel.” Chef Rachael exclaims.

Pawel Nowack, Director of Catering at Binghampton University said “this was the best Global Chef catered event! Amazing team, bravo”.
