Featured talent – Antonia Jervois, Cookery Apprentice

Meet Antonia Jervois, just one of our talented apprentices!  Antonia began her Commercial Cookery Apprenticeship last year at Sodexo Australia’s PricewaterhouseCoopers Brisbane contract.   Led by PwC Catering Manager, Dawn Dixon and supervised by Head Chef William Wallace, Antonia has quickly propelled through her theoretical training while gathering practical skills and experience with everything from large functions to a la carte meal preparation and service. 

Originally from the Cook Islands, Antonia always held an interest in food and hospitality. With several years of experience in small scale catering under her belt, Antonia was ready to further her career.  Since joining Sodexo, Antonia has gathered considerable knowledge and experience through her Commercial Cookery apprenticeship training and is on an accelerated pathway to completion.   With only a few assessments left, Antonia has passed all her theoretical and practical assessments with flying colours!

Putting her skills and creativity to use, Antonia designs and prepares a beautiful 3-course vegan fine dining menu

Antonia has expressed interest in a short secondment in other Sodexo segments to broaden her knowledge and exposure to different teams and cookery environments – particularly in the Energy & Resources segment.
