Sage advice on a water-saving herb garden

Sometimes you have to think outside the box to recycle, reuse and renew, Leonie Whelan, Chef Manager at Yallambee Village in Traralgon says. The team’s initiative was truly thinking outside the carton, as it were. 

When considering what to do for Sodexo’s WasteLESS week this year, Leonie noted that the site already uses scraps from the kitchen for compost and feeding the chickens, and recycles all its empty boxes and tins. So she had to come up with an entirely different way to waste less…

The result? A vertical herb garden made out of reused milk cartons! 

Not only was this a perfect WasteLESS Week solution, but it got the aged care facility’s residents involved too. Sodexo’s staff, our client, and consumers worked together to dig in and get their hands dirty building the herb garden in just one day.

“The new vertical garden is being put on a timer system to save water. Each bottle lines up, drip feeding to the ones below, making every last drop count.  Once the herbs are established, we will be able to use them in the meals.”

Leonie says she looks forward to using the home-grown herbs in her cooking. Yallambee Village has a gardening group that tends twice weekly to the site’s established vegetable garden and hothouse – and now they have a fresh herb garden too.
