The Global Chef Program is a month long international chef residency that provides an opportunity for Sodexo’s top chefs worldwide to travel to different countries and share authentic international cuisine with students, faculty, staff, and the community.
Chef Phillip Graham Park was nominated to represent Sodexo Australia in the ‘Flavours of Australia’ global chef program, which took place across Midwestern America Sodexo Health and Education sites last month.
The culinary tour showcases modern Australian dishes and ingredients, as well as cooking demonstrations that involve students and the public. The highlight of the tour was a 6 course VIP function at Marquette University, where attendees were blown away by the exquisite food and event décor.
Chef Park joined Sodexo in 2011 and is now the head chef and mentor at Kuditj, specialising in Bush Tucker and Indigenous influenced cuisine and developing new products such as gourmet jerky. As a mentor, Chef Park provides training to talented young Indigenous chefs and is “passionate about sharing (his) knowledge and helping develop individuals to be all they can be.”
